I finished cleaning the house today and got a lot of little things out of the way. Christmas tree is still up and some of the decorations are still out. But I did finish organizing and deep cleaning the kitchen and the pantry is done as much as possible until I find some more boxes to unpack.
I finally took a photo of the quilt I am sending to a niece who got married around Christmas. I had put off boxing it up until I took the picture...
It was too large to try and quilt with my sewing machine so I tied it. I also added a line of machine decorative stitches around the edge just inside the binding.I thought I would share a recipe with you...my version of Swiss Steak. I ran across a sale of London Broil a few weeks ago so I decided to use one of those pieces rather than my preferred chuck roast. As it was fairly large, I cut it into three pieces.
You can make this in an electric frying pan or a dutch oven on the stove. First I added a thin layer of olive oil to the pan and browned all the sides of the pieces of beef.
Once browned, I added a can (medium) size of crushed tomatoes. Normally I would have added two cans but I only added one so I substituted a can of tomato soup. I also added a large onion cut into fairly large pieces and, of course the meat. I brought the ingredients to a boil and immediately turned it down to a medium simmer for several hours. After about three hours, I felt the beef was not falling apart fast enough so I cut it into much smaller pieces. After another hour and a half, the meet was falling apart.
As the juice was low, I added about 3/4 cup water, a tablespoon of garlic powder and a tablespoon of French Provence Herb mixture and continued to simmer on a low simmer until dinner. Just before serving, I added two cups of sour cream to the meat mixture.
Some folks serve it over noodles and some over potatoes. I like it over rice...
Add some fresh or frozen corn on the side and it makes a very good dish. What's nice is that although it cooks a long time, you can leave it alone for long stretches. I have also made this in a crock pot, but since ours is packed, I made it on the stove.
The meat was a very lean cut but the only fat added was the olive oil and I added no salt nor pepper so it was a bit better for one's health. As there was a lot of meat (enough for several meals) I added two cups of sour cream but normally I only add one cup.
It's very good and filling. You might want to give it a try sometime.
