Today is sunny and I love it. I can't believe how much the lack of sun has effected me this year...more than in past years.
And once again, the weekend is upon us. I haven't gotten as much done with my goals as I was hoping. Moving a ton of boxes is not my idea of fun. But I have found more studio boxes and now I am trying to figure out where to put them. I am planning on setting up another shelf to accommodate the rest of the things.
How do you feel about lentils? I love the Lebanese food called jethra which is a very plain dish of lentils and rice with caramelized onions. It's simple and very filling.
It starts out with eight cups of water and one cup of lentils. Bring to a boil and then simmer until lentils are fully cooked. When lentils are cooked add a cup of rice, and continue cooking until the rice is done and the mixture is not soupy. Add salt and pepper as desired.
In the meantime, cut four or five large onions into slices and separate the rings, cook in olive oil until the onions are caramelized.
Serve by placing the onions on top of the lentil/rice mixture and drizzle with a good olive oil.
