I made it...the season of orange has been taken down, packed in boxes and the boxes are in the guest bedroom for now (until I make space in the closet with the Christmas decorations). So tomorrow, I will be cleaning and then out comes the Christmas decorations...at least part of them.
I was watching the Barefoot Contessa Cooking Show a few days ago and one of the things she made was a very easy candy desert. So when I went out to run a few errands, I picked up the ingredients - basically white chocolate, nuts, dried cranberries and raisins. I'm sure she used the best ingredients, but I got the sale items. She also used dried apricots, but I chose raisins instead. It is so simple that I can hardly believe it.
First, roast some nuts in the oven for about 15 minutes.
When cool, rough chop the nuts...
Next, you melt the white chocolate in the microwave. Set it for 30 seconds, stir, 30 seconds, stir until melted.
Add the raisins and cranberries to the nuts and mix...
Then add to the melted white chocolate and stir in...
Finally, spread into a large pan lined with parchment paper and let cool...
I broke off a piece and it was delicious. Roasting the nuts made a big difference so I suggest not skipping this. But all in all it took very little time and tastes great.
