June 7: Summer Enjoyment


Yesterday was one of those days that got away from me.  Have you every gone to bed thinking you had one house only to wake up and find out you had the other one...realtor mistake.  It was a wild day to say the least.  Added to that was a major error on my part...well, things got straightened out finally and Saturday we have an inspection...fingers crossed that it goes well.   I will add another post later today but here's yesterday's.
 
I used to throw all my vegetable scraps in the compost pile but lately I have been regrowing many of them to harvest again.  For instance, I regrow beets to use the greens.  The same with celery, romaine and butter lettuce.

All you need is a container to hold water and toothpicks.   For beets, after you have cut off the greens, cut off a small slice from the top of the beet.  Place in warm water and put it in sunshine.  It will produce more greens which I love to add to salads.

With celery and romaine or butter lettuce you may need to add three toothpicks.  After you have cut off the celery stalks, insert three toothpicks and place in a glass container  (large baby food jars work well) wide enough to suspend so the the bottom part is in water.  Place in a sunny spot.  Once the roots have developed, you can add it to a pot with soil to get more greens.

Regrowing lettuce is the same as celery including planting it in a pot with soil when the leaves get to be about three inches high.

With all of the vegetables, make sure to add water when needed and keep in a sunny place if possible.

I enjoy regrowing because it's fun...and kind of like getting something for nothing! And I love having lots of plants around, especially ones that I can harvest.  Give it a try.  And if you have kids, let them try it out also.  It may encourage them to eat more greens...or at least give them a try!
