I spent the majority of yesterday photographing quilts. Some of them are really beautiful. I did take time out to make dinner...a meatloaf, scalloped potatoes with sour cream instead of cheese and fresh peas.
And this morning, I took the turkey out of the freezer and put it in the refrigerator so it will thaw out by Thanksgiving.
I was looking for some vegan sides to serve and found out the the Pork Stove Top Stuffing is 'accidentally' vegan...guess there's no animal protein in it. That will make stuffing easy. I want to add mushrooms, nuts and vegetarian sausage to it. Guess I will leave out the oysters...that would make it non-vegan.
I plan on making pumpkin, pecan and vegan sweet potato pies for Thanksgiving. The green bean casserole, mashed potatoes, and corn for the sides. The turkey is the main meat but there will be a couple more vegan/vegetarian sides. And the lime jello, cottage cheese, nuts and mayo salad. (I know, it's an acquired taste!)
Well, it's back to photographing quilts...
