I have lots of errands to run today and tomorrow so my posts will probably be short.
I made supper last night and the roasted vegetables turned out great. Last year I didn't do so well because I forget that things roast differently at high altitudes. Yesterday I slow roasted them...potatoes, sweet potatoes, carrots, green pepper, tomatoes, cauliflower and onions! They were great. I also slow roasted some very large chicken legs which also turned out great. Going to make Julia Childs more than onion soup recipe on Friday. That takes a long time but is it every good!
What do you think? I really like the way this is turning out. And you know what? It's lots of fun...cut and paste like kindergarteners!
There's a poster in this room that basically asks a question: Do you live by choice or by chance? It got me thinking about how lives evolve. I think that living by choice is far better than living by chance. Although, there are times when chance happens...in other words, plans made were upended by unexpected events out of your control...it's still your choice as to how to respond to that chance.
Have you ever considered how you live your life...by choice or by chance? It's an interesting thought experiment and it may give you some insights as to who you are and how you got to where you are. And knowing yourself better is always a good thing. Give it a try and see what you come up with...choice or chance!
