I worked in the garden yesterday. I took out all the tomato bushes. I am still at a loss as to why they did not produce. I have always had plenty of tomatoes. On the other hand, the eggplant single plant has delivered eleven large fruits so far and I have never been successful with eggplant.
And yesterday I tried a unique recipe for eggplant. I peeled and sliced the eggplant into about 3/4 to one inch thick slices. Using mayo (yes mayonnaise!) I covered each side and then dipped the slices into dried bread crumbs. I placed them on a plain (no oil) foil covered large sheet pan and baked them in a 350 degree oven...20 minutes on both sides. They were absolutely delicious. I will make that again and again.
I also made dinner last night including the eggplant, backed chicken thighs which I coated in a thin layer of olive oil and added lots of spices but no salt. Slowly fried medium thick slices of baked potatoes in a very thin layer of olive oil, fresh corn and a simple stuffing. Enough for leftovers tonight!
Today I am going to work on the zucchini squash. Believe it or not, I have never had much success with zucchini before but this year there's almost too much. I am going to bring in the remainder of squash, wash and shred them. After leaving them in a colander to drain as much liquid as possible I will package them in one cup amounts and freeze.
I make bread, muffins and fritters out of shredded zucchini and it does freeze well for those things.
I worked a bit more on the layered journal...mostly on the front edges of each page...
