It appears that this will be the last day of 'spring like' weather.  Tomorrow we return to normal winter weather.  Actually a wintery mix will arrive late this afternoon.

The pictures coming out of Minnesota are truly stunning and not in a good way.  I actually never thought I would see something like this after the protest incidents surrounding equal rights or the Vietnam War.  But, unfortunately, history repeats itself.  I guess some of us never learn.  The better angels of our nature will surface again in this test of our democracy and hopefully show that we can keep it!

Last Wednesday we talked about creating a dry food pantry for those times when we are really short of money.  Some of the items I suggest you start with are dried beans, peas, lentils and rice.  Two produce items that keep for a long time are onions and carrots.   Three other items to keep on hand are salt, pepper and oil (Olive oil is best but expensive.  Canola oil is a great substitute and inexpensive.). You can make a variety of meals with these items.

Jehdra is a filling, great tasting meal of lentils, rice and onions.  One cup lentils (about 80 cents) cooked in five cups of water until soft.  Add one cup of rice (about 45 cents) to the lentils and water mixture and cook until rice is done and the mixture is not watery.  Salt and pepper to taste.   In the meantime fry three sliced onions in a small amount of oil until brown but not burned.  Serve onions over the lentils and rice.

Another really cheap meal is bean soup.  You can actually purchase a package complete with several beans and seasoning for a large pot of soup at around $2.44.  Add some bread, biscuits or cornbread and you have an inexpensive meal for a family.

Split green pea soup is another option.  A package of dried green peas (about $1.45) added to 6 or 7 cups of water, a couple large carrots (peeled and cut into large pieces) and a whole onion, salt and pepper.  Cook until peas are the consistency of a creamy puree.  Again, great tasting and filling.

I have finally finished organizing my junk journal supplies...

These are junk journals in process.  The box on the left has several different projects in process.  The middle box has lots of created elements to add to the journals like pockets, notebooks, cards, etc...

each type of item in its own container which I made out of cardstock cut to size and taped together.  The third box on the right in the first picture contains premade covers and various pieces of cardboard.

The studio is about 90% sorted and organized.  I still need to create a few more project boxes for the projects I am planning on definitely doing this year.  And a container with lots of small drawers needs sorting and labeling and that's it.

By the way, I did get the decorations put away including the electric cords, just in time for the return of winter.
