February 9, 2023. Creating in the Kitchen

I was looking at our ten day forecast and saw that snow is in the forecast!  Not the rain we had today.

Problem is that the high for the snow day is 51 and the low is 31.  How do we get snow out of those temperatures?  If it does snow, it will not be around very long.

So today I played around with  lentils.  Using a large frying pan, I started with one large onion, chopped into medium pieces which I sauteed in a couple tablespoons of olive oil until soft.  I  added three garlic cloves, sliced thinly, to the onions.  After a few minutes I added three stalks of celery cut into quarter inch slices and three carrots sliced into quarter inch rounds, a half cup of walnut pieces a scant tablespoon of Herbs of Provence.  

I let this mixture cook on medium heat until the carrots began getting soft.  I then added about two cups of lentils, three and a half cups water, and a tablespoon of Better than Bouillon, brought it to a boil.  Once it was boiling, I turned it down to simmer, covered the pan and let it simmer until the lentils were soft and the mixture was not soupy.  

I decided I wanted more onions, so I sliced another onion and in a separate pan, sauteed it until lightly brown.  I then added that onion to the lentil mixture.  

I actually enjoyed myself although it did take most of the afternoon.  (I did make a double batch of chocolate chip cookies at the same time!). If you want to do some creating in the kitchen, start out with what you have (lentils and veggies), look at the recipes that come up on line and then play around and create your own recipe.  This is one I will make again and serve it like a very thick stew topped with some sour cream.
