If you're not ready for the Holidays yet, it's 'down to the wire' time!  Christmas and Chanukuh is Wednesday.  That's only two days away. 

Me?  The presents are wrapped, the house is decorated AND the baking is done!  That was this past weekend's to-do list.  

So what did I make?  Well, instead of plum pudding we like cranberry pudding which is a steamed pudding served with a sweet sauce.  This year I steamed it in the oven and it turned out great.  

I first greased a bundt cake pan, put the pudding mixture in and sealed it with foil.  I placed it in my largest roaster, added boiling water halfway up the pan, placed the roaster with the cover on in a 350 degree oven for two hours checking the water level halfway through.  This is what it looked like after two hours...


I made my fruitcake cupcakes which the entire family loves...

Besides making one batch of fudge, I also made three different cookies.  A date nut drop cookie, Russian teacakes and a caramel refrigerator cookies which still needs to be baked...


Now that the baking is done, dinner on Christmas Eve and Christmas Day need to finalized.  Christmas Eve is going to be pea soup and perhaps some home made potato sausage patties.  Christmas Day is going to be a ham dinner with all the normal sides.  Both dinners are easy and take very little time to put together.  I guess you could say that my holiday plans are done...and it's a very good feeling.

I like to use the entire twelve days of Christmas as part of Christmas.  One thing I want to do this year is write letters and send cards via snail mail.  It's also a great time to 'count my blessings' and use a twelve-day gratitude journal.    

Part of those days will be spent on future plans for the blog.  I have some plans already finished and ready to go, others I am still working on.  As they say...'stay tuned'.
